Foodie Fridays: Butter Chicken

The recipe for butter masala is up, so here is a recipe to actually make butter chicken! The ratio I use is – 1 cup butter chicken sauce to 1 chicken breast. This is best served with rice and naan.

Ingredients:

  • 1 cup butter chicken sauce (click here for recipe)
  • 1 chicken breast, cut into bite size pieces
  • 1 handful baby kale or baby spinach

Directions:

  1. In a small pot, cook chicken in sauce over medium heat for 5-10 minutes. Allow it to boil.
  2. If you’re using kale, add 1 handful of kale now, turn heat down to low and cook for another 8-10 minutes, stirring to ensure it does not stick to the bottom and burn.
  3. If you didn’t use kale, add a handful of spinach now, remove from heat, mix well and cover pot for 2-3 mins. It is ready to serve.

Alternate recipe:

Another way I like to make butter chicken is to grill the chicken first before boiling it in the sauce – I find this integrates more flavour into the chicken.

Ingredients:

  • 1 cup butter chicken sauce
  • 1 chicken breast, cut into bite size pieces
  • 1/4 tsp garlic powder
  • 1/4 two mild curry powder
  • cayenne chilli powder
  • 1 handful of kale or spinach

Directions:

  1. In a bowl, Mix garlic powder, curry powder and cayenne chilli powder and coat chicken pieces evenly. Allow to marinate for 30 minutes. I recommend just covering the chicken with cling wrap and not putting it back in the fridge, this will allow for more even cooking.
  2. In a non-stick pan or grill pan, brown chicken, flipping/turning often to create a crust. Do not worry about the chicken being half-cooked, simmering the chicken in the sauce will help it finish cooking.
  3. In a small pot, heat up the butter chicken sauce and the chicken, allow it to boil. Add kale at this point and turn down heat. Allow to simmer for 5 minutes on low. And it’s ready to serve.
  4. If you didn’t add kale, allow the sauce and chicken to boil. Turn it down to low heat for 10 minutes. Turn off heat, add handful of spinach, mix well, cover pot. Let sit for 2-3 minutes, and it is ready to serve.
